Abstract

La invención proporciona un método para obtener un aislado de proteína de tubérculo, que comprende a) pelar al menos un tubérculo, para obtener de esta manera al menos un tubérculo pelado y una composición de pelado de tubérculo; b) procesar el al menos un tubérculo pelado para obtener un líquido acuoso que comprende proteína de tubérculo; y c) someter el líquido acuoso a un paso de aislamiento de proteína para obtener el aislado de proteína de tubérculo. Se ha descubierto que pelar las papas antes de aislar la proteína tiene varios beneficios: la proteína cruda aislada, o un hidrolizado de la misma, es más limpia, y tiene una composición enriquecida en tirosina, prolina, arginina glutamina, glutamato, asparagina y aspartato. Por otro lado, la composición proteica obtenida de las cáscaras de los tubérculos está enriquecida en los aminoácidos esenciales treonina, leucina, isoleucina, metionina y fenilalanina.
