Abstract
La invención se refiere a un método de extracción de semillas de nuez de pacana que incluye las etapas de medir las nueces de pacana de las que se extraerán las semillas para tener una variación de tamaño de diámetro máximo de 8 mm; controlar el contenido de humedad de las cáscaras de las nueces de pacanas dentro de un rango de control de humedad de la cáscara del 3% al 30%; calentar las semillas a una temperatura de entre 20°C y 100°C; pre-rompimiento de las cáscaras; sumergir las nueces en nitrógeno líquido, o similar, entre 5 y 15 segundos; y romper las cáscaras en no más de 15 segundos después de completar la etapa de inmersión en fluido criogénico para separar sustancialmente las cáscaras de las semillas. El método también incluye realizar los pasos en ausencia de un paso previo al rompimiento y en ausencia del paso de inmersión en fluido criogénico.
