Abstract

A method for manufacturing a non-lauric-acid, low-trans-acid, nontempering type hard butter composition involves step (1) or (2) below, and further involves steps (3) and (4) below: (1) a step of subjecting an oil/fat blend including a high-oleic-acid-content oil/fat and a highly hydrogenated palm oil to a transesterification reaction, to obtain an oil/fat (A1) satisfying specific conditions (see Description for details); (2) a step of subjecting an oil/fat blend including palm stearin and a highly hydrogenated oil/fat having an iodine value of 5 or less to random transesterification, to obtain an oil/fat (A2) satisfying specific conditions (see Description for details); (3) a step of obtaining an oil/fat (B1) or (B2) constituted by a low-melting-point fraction of the oil/fat (A1) or (A2) by crystallization from the oil/fat (A1) or (A2); and (4) a step of subjecting the oil/fat (B1) or (B2) to a deodorizing treatment by bringing water vapor into contact therewith, to obtain an oil/fat (C1) or (C2).
