Abstract

La presente invención describe un método para la producción de una bebida ácida a temperatura ambiente que contiene Bacillus coagulans formadoras de esporas, que comprende los siguientes pasos: se prepara una bebida ácida y se esteriliza bajo condiciones de esterilización correspondientes a 750° C a 110° C durante 23 a 33 segundos; luego se dispersan Bacillus coagulans formadoras de esporas en agua estéril, y la disolución de Bacillus coagulans así obtenida se pasteuriza bajo condiciones de pasteurización correspondientes a 70 a 90° C durante 23 a 33 segundos; la bebida ácida obtenida después de la esterilización y la disolución de Bacillus coagulans formadoras de esporas se disponen en un envase de lata para obtener una bebida ácida a temperatura ambiente que contiene Bacillus coagulans formadoras de esporas. Al emplear un proceso de esterilización de dos pasos, dicho método asegura que la concentración de Bacillus coagulans formadoras de esporas activas se ajusta a las normas relevantes a la vez que mantiene la estabilidad de la bebida ácida y extiende significativamente el período de conservación de la bebida ácida.
