Abstract
La presente invención se relaciona con tortillas que se forman de una composición que incluye una mezcla de harina sin gluten que constituye de 40-70% del peso de la composición, con la mezcla de harina sin gluten que consiste de una combinación de tres o cuatro harinas diferentes. En cualquiera de las tres o cuatro versiones de harina, la primera harina, la cual es también la harina de porcentaje más alto, es harina de tapioca, la segunda harina es harina de quinua y la tercera harina es cualquiera de harina maíz o arroz. En la cuarta versión de la harina, se adiciona harina de amaranto a esta combinación global. La composición también incluye por lo menos 30%, de preferencia 30-50%, de agua en peso de la composición, y una enzima, tal como en una cantidad de aproximadamente 0.2-1%, para propósitos de integridad estructural.
