Abstract

Las tortillas se forman a partir de una composición que incluye una mezcla de harina libre de gluten que constituye del 40 - 70% del peso de la composición, con la mezcla de harina sin gluten que consiste en una combinación de tres o cuatro harinas diferentes. En cualquiera de las versiones de tres o cuatro harinas, la primera harina, que también es el porcentaje más alto de harina, es harina de tapioca, la segunda harina es harina de quínoa y la tercera harina es harina de maíz o de arroz. En la versión de cuatro harinas, la harina de amaranto se agrega a esta combinación general. La composición también incluye al menos 30%, de modo preferente 30 - 50%, de agua en peso de la composición, y una enzima, tal como en una cantidad de aproximadamente 0,2 - 1%, con fines de integridad estructural.
