Abstract

La invencion se refiere a un procedimiento para el tratamiento de una materia prima que contiene almidon termicamente inhibido y/o harina termicamente inhibida como su constituyente mas grande, por lo cual el contenido de humedad de la materia prima es cuando mucho de 8% en peso, que comprende un paso de rehumidificacion en donde entre 0.1 y 30% en peso de una fase acuosa se anade a la materia prima para formar un producto que contiene almidon rehumidificado y/o harina rehumidificada.
