Abstract
La presente invención se refiere a una emulsión estable de una fase acuosa en una fase lipídica, en donde los sólidos de cacao no grasos y/o los sólidos lácteos no grasos están presentes en la fase lipídica. La presente invención se refiere, además, a un proceso para elaborar una emulsión, el proceso comprende añadir la fase lipídica en dos etapas.
