Abstract

Se describen los métodos para elaborar un puré de alimento para bebé, tal como puré de camote, mediante el empleo de un sistema de manejo de recetas que utilizan los pasos de extracción en frío seguidos inmediatamente por desaireación en frío para producir un puré de alimento para bebé todo natural. Los procesos descritos en la presente eliminan la necesidad para la adición de enzimas exógenas, conservadores o antioxidantes, mientras que evitan además cualquier requerimiento para escaldar los ingredientes vegetales. También contenidos en la presente descripción están los métodos y sistemas para generar purés a partir de uno o más ingredientes iniciales.
