Abstract

Se proporciona una composición emulsionante que comprende (a) un éster de mono y diglicéridos del ácido diacetil tartárico (DATEM); (b) ácido acético libre en una cantidad menor que 0.4 % en peso, con base en la cantidad de DATEM; y (c) una sal o una base, en donde la sal o la base es capaz de donar un ion metálico a uno o más ácidos carboxílicos presentes en el DATEM para formar una sal del ácido carboxílico presente en el DATEM, en donde la sal o la base está presente en una cantidad para proporcionar un grado de neutralización de al menos 0.25 % mol.
