Abstract

La presente invención maneja la cuestión de proporcionar un método de producción de azúcar sin refinar y etanol donde la sacarosa no se descompone fácilmente durante fermentación de una solución de azúcar, el rendimiento de azúcar sin refinar es alta y el rendimiento de etanol es también alto. Una solución a la cuestión es un método de producción de azúcar sin refinar y etanol que incluyen: una etapa en la cual se calienta una solución de azúcar derivada de planta y refinada; una etapa en la cual se condensa la solución de azúcar refinada a un valor Brix de 15-50% una etapa en la cual la solución de azúcar condensada es enfriada a temperatura de fermentación, una etapa en la cual el contenido de azúcar no sacarosa en la solución de azúcar condensada es convertida selectivamente a etanol por fermentar la solución de azúcar condensada y una etapa en la cual el líquido de fermentación es condensado.
