Abstract

El objetivo de la presente invención es proporcionar una técnica con la cual el sabor de los productos tales como leche fermentada que usan las bacterias Bifidobacterium pueda mejorarse mientras se mantiene el efecto de las Rubus suavissimus S. Lee para mejorar la viabilidad de las bacterias Bifidobacterium; se proporciona un alimento fermentado que incluye: una esencia de Rubus suavissimus S. Lee obtenida como un concentrado a través de la electrodialización de un extracto de Rubus suavissimus S. Lee agregado con una sal inorgánica; y bacterias del género Bifidobacterium; también se proporciona un método para producir tales alimentos fermentados.
