Abstract
La presente invención tiene por objeto nuevas cepas de levadura de panificación, así como levaduras de panificación frescas o secas obtenidas a partir de esas cepas y su utilización en panificación, que actúan sobre masas sin azúcar y/o ligeramente azucaradas, eventualmente en presencia de inhibidores de mohos.
