Abstract

El objeto de la presente invención es el uso de una maltodextrina y/o un jarabe de glucosa obtenidos, mediante hidrólisis ácida o enzimática, de un almidón de leguminosas que tiene un contenido de amilosa comprendido entre el 25% y el 40%, expresado como peso seco en relación al peso seco del almidón, para la encapsulación de compuestos orgánicos.
