Abstract
La presente invención se refiere a procedimiento para la preparación de un producto cocido de prolongada conservación a base de proteina animal donde se cuece y esteriliza carne o pescado, caracterizado porque la cocción-esterilización tiene lugar en continuo dentro de un intercambiador de superficie con rasqueta y en presencia de un agente tecnológico escogido entre las gomas vegetales y la carboximetilcelulosa.
