Abstract
La presente invención se refiere a un procedimiento para desoxigenar y separar los volátiles de aroma y de sabor de bebidas, caracterizado porque comprende: a) calentar una bebida seleccionada de jugo de frutas, jugo de verduras, cafe, te, cereales tostados y extractos de achicoria, a una temperatura aproximada de 45 a 110 grados C, durnate un tiempo de 10 a 12 segundos; b) dispersar la bebida a gotas que tengan un tamaño de 40 angstroms a 4000 angstroms, a una temperatura de 10 a 30 grados C, y a una presión de 5 torr a 100 torr, de manera que se separe la fracción de volátiles de la fracción de fondos desaromatizada; y c) recuperar la fracción de volátiles a una temperatura aproximada de 8 a -190 grados C.
