Abstract

Invenţia se referă la industria alimentară, şi anume la un procedeu de obţinere a acidifiantului de cupaj din struguri şi mere.Procedeul, conform invenţiei, include inspectarea, sortarea şi spălarea strugurilor, desciorchinarea, zdrobirea bobiţelor, tratarea mustuielii obţinute cu enzime pectolitice timp de 30…45 min, presarea mustuielii, deburbarea şi filtrarea mustului obţinut, cupajarea cu acidifiant din mere în proporţie de 45…60%, omogenizarea şi tratarea termică la temperatura de 70…72°C timp de 20...25 min. Pentru obţinerea acidifiantului se utilizează struguri cu un conţinut de substanţe uscate hidrosolubile de 10,0...13,9% şi aciditatea titrabilă de 1,5...2,8% şi mere cu un conţinut de substanţe uscate hidrosolubile de 10,0...11,9% şi aciditatea titrabilă de 1,7...3,0%.
