Abstract

Inventia se refera la industria vinicola, si anume la un procedeu de obtinere a vinurilor materie prima aromate.Procedeul, conform inventiei, includezdrobirea cu desciorchinarea strugurilor, sulfitarea si macerarea mustuielii, separarea mustului, dezacidifierea chimica a acestuia cu K2CO3 cu reducerea aciditatii titrabile cu 1…2 g/dm3, fermentatia alcoolica, totodata la fermentarea zaharurilor pana la valoarea de 10…15 g/dm3, concomitent se efectueaza dezacidifierea biologica prin administrarea bacteriilor malo-lactice si a unui nutrient malo-lactic, tratarea enzimatica cu un preparat cuactivitate beta-glucozidazica si agitarea periodica timp de 48 h cu dioxid de carbon. La finele fermentatiei alcoolice se efectueaza decantarea de pesedimentul de drojdii. Rezultatul consta in ameliorarea calitatii vinurilor materie prima aromate.
