Abstract

Inventia se refera la industria vinicola, si anume la un procedeu de fabricare a unei bauturi tari invechite. Procedeul, conform inventiei, include invechirea distilatelor de vin crude in prezenta lemnului de stejar, prepararea cupajului din distilate de vin invechite, apa dedurizata, sirop de zahar si caramel, repausul cupajului si filtrarea acestuia. Totodata prepararea cupajului se efectueaza in doua etape consecutive, la prima etapa se omogenizeaza distilatele de vin invechite, dupa care amestecul de distilate se trateaza termic si/ sau cu frig, iar la etapa a doua se administreaza restul componentilor de cupaj. Rezultatul consta in majorarea stabilitatii produsului finit.The invention relates to the wine industry, namely to a process for the manufacture of an old country drink. The process, according to the invention, includes the aging of raw wine distillates in the presence of oak, preparation of aged wine distillates, softened water, sugar and caramel syrup, the rest of the blend and its filtration. At the same time, the preparation of the blending is carried out in two consecutive stages, in the first stage, the aged wine distillates are homogenized, after which the mixture of distillates is heat and / or cold treated, and in the second stage the rest of the blending components is administered. The result is increased stability of the finished product.
