Abstract

The invention refers to the dairy industry, in particular to a process for cheese production.The process for cheese production includes coagulation of milk, step-by-step pressing, salting, maturation, inspection and separation of the off-grade cheese, which is comminuted, treated with liquid phase in the mass ratio cheese:liquid phase of 1:(1…3) at the temperature of 20±2°C during 2,0…2,5 hours. The liquid phase is removed and the comminuted cheese is mixed with a structure-forming additive and is pressed in two stages: in the first stage with a weight of 1,0…1,8 kg to 1 kg of cheese during 2,5…3,0 hours and in the second stage with a weightof 2,5…3,0 kg to 1 kg of cheese during 3,5…4,0 hours.As liquid phase is used caseic whey or aqueous solution containing 2% of table salt and 0,5% of lactic acid. As structure-forming additive is used pectin and/or modified starch, and/or carragheenin, and/or xanthane, and/or casein.The result of the invention consists in removing the cheese defects and in obtaining a product with stable and high quality indexes.
