Abstract

Invenţia se referă la industria alimentară, şi anume la procedeele de obţinere a substanţelor edulcorante din stevie.Procedeul conform invenţiei include extracţia glicozidelor din steviauscată cu apă la temperatura de 80...85°C, timp de 1,0...1,5 ore, până la conţinutul fracţiei masice de substanţe uscate de 8...10%. Extractul obţinut se tratează cu acid ortofosforic sau cu acid citric la agitare până la pH 3,0...3,4 la temperatura de 60...64°C, timp de o oră. După filtrarea extractului se efectuează tratarea lui cu oxid sau hidroxid de calciu la agitare la temperatura de 50...60°C, timp de o oră până la pH 11,8...12,2. Extractul obţinut se filtrează şi se tratează cu acid ortofosforic la temperatura de 20...30°C, timp de 2 ore până la pH 8,2...9,0, se filtrează, se neutralizează cu acid citric până la pH 4,0...4,2 şi se sterilizează. Pentru obţinerea extractului concentrat după neutralizarea cu acid citric până la pH 4,0…4,2 se efectuează răcirea lui până la temperatura de 2...6°C cu menţinerea timp de 2 zile, decantarea sedimentului şi concentrarea extractului până la conţinutul fracţiei masice de substanţe uscate de 48...58%.Rezultatul invenţiei constă în obţinerea extractului de stevie cu un înalt grad de purificare fără utilizarea solvenţilor organici.
