Abstract

Invenţia se referă la industria alimentară, în special la o compoziţie şi un procedeu de fabricare a compoturilor conservate cu proprietăţi funcţionale de caracter diabetic.Compotul conţine următoarele componente, în % de masă: fructe sau pomuşoare 45...70, sirop din extract apos de stevie (cu conţinutul masic de glicozide de 0,12...0,32%) 30...55.Procedeul de obţinere a compotului include pregătirea fructelor sau a pomuşoarelor, prepararea siropului, ambalarea fructelor sau a pomuşoarelor în recipiente, turnarea siropului, închiderea şi sterilizarea. Siropul se pregăteşte din extract apos de stevie cu conţinutul masic de glicozide de 0,12..0,32%. Înainte de turnare în ambalaj siropul se fierbe timp de 4...5 min.Rezultatul invenţiei este obţinerea produsului cu proprietăţi funcţionale de caracter diabetic, îmbogăţit cu aminoacizi, vitamine, polifenoli şi substanţe minerale.
