Abstract

The invention relates to the wine industry, namely to processes for matured wines production.Summary of the invention consists in that the process for matured wines production includes obtaining of new wine, mixing thereof with oak raw material in two consecutive stages, in the first of which the oak raw material is introduced in one part of the wine with subsequent introduction of this part in the remaining volume of the wine in the second stage. Novelty of the invention consists in that in the first stage it is additionally carried out the alcoholic fermentation of the wine mixture with oak raw material.In the capacity of oak raw material is used natural or specially worked oak wood (stave, chips, sawdust or oak chips), liquid or solid materials obtained by extraction of components from the natural or worked oak wood. The special treatment of the wood is carried out by thermal, peroxide and ultraviolet treatments.The result of the invention consists in producing stable wines with maturation nuances in shortened terms.
