Abstract

The invention refers to the wine industry, in particular to the production of matured wines. Summary of the invention consists in that the process for production of matured wines provides for the production of new wine, treatment of the oak sawdust, production of an oak extract and administration thereof into the new wine. Treatment of the oak sawdust is carried out with sulphited wine at the sulphurous anhydride concentration of 250...500 mg/l. Production of the extract is carried out by treatment of the oak sawdust with wine in the ratio of 1:(10...20) at the wine keeping/maturing temperature. Administration of the oak extract into the wine is carried out in two consecutive stages: in the first stage the extract is homogenized with part of the new wine, constituting 10...50% of its total volume and, after keeping/maturing of the treated wine, in the second stage it is mixed with the remaining volume of the new wine and it is subjected to an additional keeping/maturing.The result of the invention consists in increasing the quality of the produced wine.Claims: 1
