Abstract

Invenþia se referã la industria vinicolã, ºi anume la procedeele de fabricare a vinurilor spumante.Procedeul propus include cupajarea ºi tratarea vinurilor materie primã seci brute, pregãtirea siropului de zahãr, alcãtuirea amestecului fermentativ din vin materie primã tratat ºi sirop de zahãr ºi fermentarea secundarã a vinului în prezenþa drojdiilor sub presiunea dioxidului de carbon format pânã la consumarea a 18…22 g/dm3 de zahãr introdus. Noutatea invenþiei constã în aceea cã în procesul fermentãrii secundare concentraþia zahãrului în amestecul fermentativ se menþine la 2…6 g/dm3.Rezultatul tehnic constã în îmbogãþirea vinurilor cu substanþe biologic active prin autoliza drojdiilor în procesul fermentãrii secundare.
