Claims (1)

  1. Zivju produkta iegūšanas paņēmiens aptver izejvielas sagatavošanu, filejas veidošanu, apstrādi ar garšvielu - sāls maisījumu un kūpināšanu un atšķiras ar to, ka produkta kvalitātes uzlabošanas, gatava produkta uzglabāšanas termiņa palielināšanas un zivju produkta sortimenta paplašināšanas nolūkā, pēc filejas izveidošanas zivi marinē, pie kam, marināde tiek gatavota no sāls šķīduma ar koncentrāciju 1,18-1,20 g/cm3, marinādes un zivju tilpumu attiecībai jāatbilst 1:1, pirms kūpināšanas zivi nosusina istabas temperatūrā, bet pēc tam 2-3 stundas apkaltē, pakāpeniski paaugstinot temperatūru no +15°C līdz +25°C, un kūpināšanu veic 8-12 stundās, pakāpeniski paaugstinot temperatūru no +25°C līdz +28°C.
