Abstract
본 발명은 식료품에 개선된 조직 및 미감을 부과하는 매우 결정성인 부피 조정제를 함유하는 저열량 식료품에 관한 것이다. 이러한 식료품은 1,4-무수글루시톨 또는 1,4-무수갈락티톨 및 식료품 성분을 함유한다. 무기산의 존재하에서 물-비혼화성, 높은 비점, 반응-비활성 매질중에서 갈라티톨을 가열시키는 단계를 포함하여 1,4-무수-DL-갈락티톨을 제조하는 방법이 또한 설명되어 있다. 또한 저열량 부피 조정제 1,4-무수-DL-글루시톨도 설명되어 있다.

Claims (23)
- a. 1,4-무수글루시톨 또는 1,4-무수갈락티톨; 및 b. 식품 성분을 포함하는 저열량 부피 조정제를 함유하는 식료품.
- 제1항에 있어서, 상기 저열량 부피 조정제가 1,4-무수-DL-글루시톨임을 특징으로 하는 식료품.
- 제2항에 있어서, 상기 저열량 부피 조정제가 1,4-무수-D-글루시톨임을 특징으로 하는 식료품.
- 제2항에 있어서, 상기 저열량 부피 조정제가 1,4-무수-L-글루시톨임을 특징으로 하는 식료품.
- 제1항에 있어서, 상기 저열량 부피 조정제가 1,4-무수-DL-갈락티톨임을 특징으로 하는 식료품.
- 제5항에 있어서, 상기 저열량 부피 조정제가 1,4-무수-D-갈락티톨임을 특징으로 하는 식료품.
- 제5항에 있어서, 상기 저열량 부피 조정제가 1,4-무수-L-갈락티톨임을 특징으로 하는 식료품.

- 제20항에 있어서, 무기산이 인산이고 매질이 운데칸임을 특징으로 하는 방법.
- 제21항에 있어서, 갈락티톨이 상기 운데칸중에서 환류되고 물이 제거됨을 특징으로 하는 방법.
