Abstract

본 발명의 유동성의 볶아서 분쇄한 커피 제품은 메디안 부피(“X50”)입도가 270내지 1100㎛이고, 밀도는 0.5 내지 0.7gm/cc이고, 달일 경우 30 내지 41중량% 추출된다. 이 제품은 최대 X50 입도 270㎛의 볶아서 분쇄한 커피 과립의 응집물 형태이고, 커피를 분쇄하기에 충분한 압력 및 전단력의 조건하에 볶아서 분쇄한 전콩(whole bean) 커피를 오리피스에 통과시켜서 볶아서 분쇄한 커피 과립이 서로 치밀하게 결합되어 이루어지는 볶은 커피의 조밀한 덩어리로 형성시켜 제조한다. 다음에, 볶은 커피의 조밀한 덩어리를 재분쇄해서, X50입도의 범위가 270 내지 1100㎛이고, 커피 과립을 포함하는 응집물 형태의 볶아서 분쇄한 커피 제품을 제조한다.

Claims (14)

  1. 메디안 부피 입도가 270 내지 1100㎛이고, 벌크 밀도가 0.5 내지 0.7gm/cc이고, 달일 경우 달임 수율이 30 내지 41%이며, 270㎛의 최대 메디안 부피 입도를 갖는 볶아서 분쇄한 커피 과립의 응집물 형태인 것인 유동성의 볶아서 분쇄한 커피(flowable roasted and ground coffee) 제품.
  2. 제1항에 있어서, 메디안 부피 입도가 400 내지 850㎛인 커피 제품.
  3. 제1항에 있어서, 벌크 미도가 0.55 내지 0.70gm/cc인 커피 제품.
  4. 제1항에 있어서, 상기 과립의 최대 메디안 부피 입도가 175㎛인 커피 제품.
  5. 제1항에 있어서, 상기 과립의 메디안 부피 입도가 50 내지 175㎛인 커피 제품.
  6. 메디안 부피 입도가 250㎛ 이상인 볶아서 분쇄한 커피와 볶은 전콩(whole bean)으로 이루어진 군으로부터 선택된 볶은 커피를 제공하는 단계; 커피를 분쇄하기에 충분한 압력과 전단력의 조건하에 볶은 커피를 오리피스에 통과시켜 볶은 커피의 조밀한 덩어리를 형성하는 단계(여기서, 상기 덩어리는 볶아서 분쇄한 커피 과립이 서로 치밀하게 결합되어 이루어지며, 상기 커피 과립의 최대 메디안 부피 입도는 270㎛임); 및 볶은 커피의 조밀한 덩이를 재분쇄해서 상기 커피 과립의 응집물 형태의 볶아서 분쇄한 커피 제품을 제공하는 단계를 포함하는, 메디안 부피 입도가 270 내지 1100㎛이고, 벌크 밀도가 0.5 내지 0.7gm/cc이고, 달일 경우 달임 수율이 30 내지 41%인 유동성의 볶아서 분쇄한 커피 제품의 제조 방법.
  7. 제6항에 있어서, 상기 볶은 커피가 메디안 부피 입도 250㎛ 이상인 볶아서 분쇄한 커피를 포함하는 것인 방법.
  8. 제6항에 있어서, 상기 볶은 커피를 펠릿 밀에 있는 오리피스에 통과시키고, 상기 볶은 커피의 조밀한 덩어리는 펠릿 형태인 방법.
  9. 제8항에 있어서, 상기 펠릿이 실질적으로 원통형인 방법.
  10. 제9항에 있어서, 상기 원통형 펠릿의 직경이 1mm 내지 6mm인 방법.
  11. 제6항에 있어서, 상기 커피 제품의 메디안 부피 입도가 400 내지 850㎛인 방법.
  12. 제6항에 있어서, 상기 커피 제품의 벌크 밀도가 0.55 내지 0.70gm/cc인 방법.
