Claims (1)
- 곡류를 분쇄하지 않고 도정후의 곡립상태로 40-50℃의 물과 혼합하여 가열. 호화시킨 후 효소 또는 맥아추출액을 사용하여 액당화한 후 여과하고 여기에 분리대두단백을 3-6중량%수준으로 첨가하여 분산시킨 후 열처리하고 젖산균을 접종하여 발효시켜서 커드상의 젖산발효제품을 얻는 곡류와 대두단백을 이용한 식물성 호상 젖산발효제품의 제조방법.※ 참고사항 : 최초출원 내용에 의하여 공개하는 것임.
