청국장을 제조하는 방법에 있어서 대맥과 콩을 1:1의 비율로 하여 대맥을 술법과 같이 수증기로 쪄서 발효시킨후 구들구들하게 건조후 콩을 푹 삶어 건조된 대맥과 혼합하여 서늘한 곳에서 45일 정도 완숙(재발효)되게 제조하여 독특한 냄새를 없애고 특이한 맛을 가지게한 대맥 청국장 제조방법.Cheonggukjang is a method of manufacturing soybeans and soybeans in a ratio of 1: 1 and steamed fermented with steam as in the method of fermentation.
