  1. 갈산 또는 그염과, 아스코르브산 또는 그염을 유효성분으로 함유하는 것을 특징으로 하는 식품의 단백질 변질방지제.
  2. 제1항에 있어서, 갈산 또는 그염과, 아스코르브산 또는 그염의 배합비가 중량비로 1 : 0.3 ~10인 식품의 단백질 변질방지제.
  3. 제1항 또는 제2항에 있어서, 염이 나트륨염 또는 칼슘염인 식품의 단백질 변질방지제.
