Claims (1)
- 분말로 혼합이 불가능한 결정성 탄수화물, 식물경화유 및 식물 단백질 분말을 혼합하여 즉석 분말식품의 제조방법에 있어서, 융점이 15~40℃인 식물경화유 20-70%와 유화제를 용응시킨 후, 결정성 탄수화물을 용해시켜 만든 과포화 용액 20~70%를 혼합하면서 결정성 탄수화물 1~5%를 결정화 종정으로 첨가하여 혼합물을 재결정시키고, 추출기를 통과시켜 지름 0.5~3cm굵기로 성형하며, 냉각공기를 순환시켜 냉각시키거나, 냉각 금속표면에 접촉시켜결정화를 촉진시키는 것을 특징으로 하는 결정화에 의한 즉석분말 식품의 제조방법.※ 참고사항 : 최초출원 내용에 의하여 공개하는 것임.
