Abstract

PURPOSE:To obtain a sugar glycerol useful as an emulsifier or surfactant of cosmetics, pharmaceuticals, etc., under mild condition, by contacting a glyceroglycolipid with a substance having ion exchange capability, thereby easily separating fatty acids. CONSTITUTION:The objective compound can be produced by contacting one or more kinds of glyceroglycolipids of formula I-IV (R1 and R2 are 7-23C fatty acid residue; G is residue of monosaccharide or its dimeter) with a substance having ion exchange capability (preferably an ion exchange polymer). The glyceroglycolipid is preferably those existing in a lipid originated from natural resources such as microorganisms, algae, fishes or higher animals and vegetables.
