관능평가상 자귀나무꽃의 향취는 이슬이 다 걷힌 후에 강하게 발산되기 때문에, 향기가 강한 자귀나무꽃 한 송이를 골라서 오전 10시부터 5시간 동안 85㎛의 폴리아크릴레이트로 코팅된 화이버(Polyacrylate Fiber)를 이용하여 향기 성분을 포집하였다. 포집장소는 경기도 용인 위치한 ㈜아모레퍼시픽 기술연구원의 임야였으며, 포집시 온도는 20℃였고 바람은 없었다.In sensory evaluation, the fragrance of the silk flower is emitted strongly after the dew is removed. 향취성분을 포집한 후, 화이버(Fiber)를 밀봉하고, 이를 GC-MS의 주입구에 옮겨 꽂은 다음, 2분간 탈착을 시키고, GC-MS를 이용하여 성분 분석을 실시하였다. 관능평가는 20~45세의 일반남녀 20명을 대상으로 하였으며, 자귀나무꽃이 만개한 화분의 시료 R2와, SPME법으로 재현한 조합향료의 시료 R1의 향취를 각각 맡아보도록 하고, 하기 표 3의 설문지에 응답하도록 함으로써, 시료 R1과 시료 R2의 향취 유사성(질문 1) 및 향취의 기호성(질문 2)을 조사하였다. 그 결과는 표 4에 나타내었다.The sensory evaluation was performed on 20 males and females 20 to 45 years old, and the sample R2 of the pollen in full bloom of the albizia julibrissin and the fragrance of the sample R1 of the combined fragrance reproduced by the SPME method were examined. 상기 참고 시험예 2에서 보는 바와 같이, SPME법에 의해 분석된 성분으로 조성한 향료 조성물은 자귀나무꽃과 향취 유사성이 거의 없었다. 이에, 조향사로 구성된 전문 평가단은 자귀나무꽃의 각각의 향취성분들에 대하여 관능평가를 수행하였다. 그 결과, 자귀나무꽃의 향취성분들 중, 시트러스 플로랄(Citrus Floral) 향취를 만들어내는 리날룰과, 달콤한 나무향(Sweet woody) 향취를 만들어 내는 시스-리날룰 옥사이드(퓨라노이드) 및 시스-리날룰 옥사이드(피라노이드), 장미꽃의 향취를 만들어내는 2-페닐에틸 알코올의 네 성분이 자귀나무꽃의 고유향취를 만들어내는 주요성분임을 확인하였다. 특히 시스-리날룰 옥사이드(퓨라노이드) 및 시스-리날룰 옥사이드(피라노이드)의 경우 다른 종류의 꽃들과 비교하였을 때 자귀나무꽃에 특이적으로 다량 함유되어 있고, 이 물질에 의해 은은하면서도 확산성, 지속성이 좋은 자귀나무꽃의 향취를 발현시킴을 확인하였다.As shown in Reference Test Example 2, the fragrance composition composed of the components analyzed by the SPME method had little odor similarity to the albizia julibrissin. Especially cis-linalul oxides (furanoids) and cis-linalul oxides (pyranoids) are contained in a particularly large amount in the albizia julibrissin compared to other kinds of flowers, and because of this material, they are soft and diffusive. , It was confirmed that the long-lasting expressive scent of the silk flower.

한편, 상기 참고 시험예 1의 SPME 분석결과에서 부차성분으로 분류된 물질 중 트랜스 오시멘 및 옥타놀은 자귀나무꽃 향취의 발현에 큰 영향을 주지 않음을 관능평가를 통해 확인하였다.Meanwhile, it was confirmed through the sensory evaluation that the trans-Ocimen and Octanol among the substances classified as secondary components in the SPME analysis result of Reference Test Example 1 did not significantly affect the expression of the Albizia scent.

[제조예] 네 가지 주성분의 함량변화에 따른 새로운 조합향료의 제조Preparation Example Preparation of New Combination Fragrance According to the Content Change of Four Main Components

상기 참고 시험예 3로부터, 자귀나무꽃의 독창적 향취의 주성분이 리날룰, 시스-리날룰 옥사이드(퓨라노이드), 시스-리날룰 옥사이드(피라노이드), 및 2-페닐에틸 알코올임을 확인할 수 있었다. 따라서, 본 발명자들은 이들 네 성분을 함유하여, 자귀나무꽃의 향취를 그대로 나타내면서, 기호성이 좋은 향료를 제조하기 위해서, 하기 표 5의 조성으로 구성된 새로운 조합 향료 R3~R10을 제조하였다.From Reference Example 3, it was confirmed that the main components of the original fragrance of the silk flower are linalul, cis-linalul oxide (furanoid), cis-linalul oxide (pyranoid), and 2-phenylethyl alcohol. [시험예 1] 조합 향료들의 관능평가Test Example 1 Sensory Evaluation of Combination Fragrances

상기 제조예에서 새로이 조합된 8가지의 향료 중, 참고 시험예 2에서 평가한 향료와 유사한 함량을 갖는 R6 향료를 제외한 나머지 7개의 조합향료를 대상으로 참고 실시예 2에서와 동일한 방법의 관능평가를 통해 자귀나무꽃 향취와의 유사성 및 기호성을 비교하였다. 한편, 두 개의 조합향료에 대한 비교관능평가를 실시한 후, 5분 동안의 휴식시간을 주어 후감각 마비현상이 없도록 하였다. 새로운 조합향료와 자귀나무꽃과의 향취 유사성 및 기호성에 관한 관능평가 결과는 하기 표 6에 나타내었다.Of the eight fragrances newly combined in the preparation example, the sensory evaluation of the same method as in Reference Example 2 with respect to the remaining seven combination fragrances except R6 fragrance having a content similar to the fragrance evaluated in Reference Test Example 2 The similarity and palatability with the odor of Albizia julibrissin were compared. [시험예 2] 조합향료들의 관능평가Test Example 2 Sensory Evaluation of Combination Flavors

상기 실시예 1~5와 비교 실시예 1 및 2의 조합향료들에 대해 자귀나무꽃과의 향취 유사성 및 향취의 기호성을 알아보기 위하여 상기 참고 시험예 2과 동일한 방법에 의해 관능평가를 실시하였다. 상기 참고 시험예 2의 방법과 마찬가지로 두 개의 조합향료에 대한 비교관능평가를 실시한 후, 5분 동안의 휴식시간을 주어 후감각 마비현상이 발생하지 않도록 하였다. 새로운 조합향료와 자귀나무꽃과의 향취 유사성 및 향취 기호성에 대한 결과는 하기 표 8에 나타내었다.Sensory evaluation was carried out in the same manner as in Reference Test Example 2 to determine the flavor similarity and the palatability of the odor of the silk flower with respect to the combination perfume of Examples 1 to 5 and Comparative Examples 1 and 2.
