Claims (5)
- 외부에 냉동기와 냉매교환수단을 갖고 다층 구조의 터널식 냉각방식으로 운용되는 급속냉동방법에 있어서,다층 구조의 터널식 동결장치가 예냉구간, 경직구간, 침지구간을 갖도록 제공되고,예냉구간에서는 외부에 별도로 설치되는 냉동기를 이용하여 -40±5℃ 범위의 냉풍을 만들어 가공대상 식품에 냉풍을 불어줘서 예냉시키는 단계;경직구간에서는 예냉구간을 거친 가공대상 식품 위에 냉매액을 뿌려주면서 표면냉각을 실시하는 단계;침지구간에서는 외부에 설치되는 냉매액 순환장치를 이용하여 냉매액의 온도를 -60±5˚C 범위로 유지 및 공급시켜 줌으로 가공대상 식품을 균일하게 냉동시키는 단계;를 포함하여 이루어지는 것을 특징으로 하는 급속냉동방법.
- 제1항에 있어서,상기 경직구간 및 침지구간에서 사용되는 냉매액은 에틸알코올과 프로필렌글리콜의 혼합비율이 9~3 : 1~7의 부피비율 범위로 제공되는 냉매액을 이용하는 것을 특징으로 하는 급속냉동방법.
- 제1항에 있어서,상기 침지구간에서 사용되는 냉매액 교환장치는 코일형이나 판형의 냉매액 교환장치가 이용되는 것을 특징으로 하는 급속냉동방법.
- 제1항에 있어서,상기 침지구간에서 냉동된 제품을 바이브레이터형 이송장치로 배출시켜 가공대상 제품의 표면에 묻어있는 냉매를 낙수시킨 다음 압축공기를 가압분사하는 건조단계가 추가되는 것을 특징으로 하는 급속냉동방법.
- 냉동기와 냉매교환수단을 갖고 간접 냉각방식으로 운용되는 급속냉동장치에 있어서,다층 구조의 터널식 동결장치가 예냉구간, 경직구간, 침지구간을 갖도록 제공되고,예냉구간에서는 외부에 별도로 설치되는 냉동기를 이용하여 -40±5℃ 범위의 냉풍을 만들어 가공대상 식품이 빙점에 가까워질 때 까지 예냉시켜 주는 수단;경직구간에서는 예냉구간을 거친 가공대상 식품 위에 냉매액을 뿌려주면서 표면냉각을 실시하여 주는 수단;침지구간에서는 외부에 설치되는 냉매액 순환장치를 이용하여 냉매액의 온도를 - 60±5˚C로 일정하게 유지 공급시켜 줌으로 가공대상 제품을 균일하게 냉동시켜 주는 수단;을 포함하여 제공되는 것을 특징으로 하는 급속냉동장치.
