Claims (3)
- 냉동보관 대상 식품류를 냉각액에 직접 침지시켜 동결보관하기 위한 냉각액 조성물에 있어서,냉각액 조성물이 에틸알코올과 프로필렌글리콜만으로 이루어지되, 에틸알코올과 프로필렌글리콜의 혼합비율이 9~6 : 1~4의 부피비율로 제공되는 것을 특징으로 하는 냉각액 조성물.
- 제1항에 있어서,에틸알코올과 프로필렌글리콜의 혼합비율이 8 : 2 의 부피비율로 제공되는 것을 특징으로 하는 냉각액 조성물.
- 냉동기에서 유입되는 프레온가스의 압축 및 응축으로 얻어지는 1차냉매가 냉매교환장치의 복합사이클론형 코일을 순환하면서 침지식 급속동결장치로부터 이송되어 오는 2차 냉매액을 냉각시켜 주며 가공대상 식품류를 일정온도 이하로 급속 동결시키기 위한 냉동방법에 있어서,2차 냉매액이 에틸알코올과 프로필렌글리콜만으로 이루어지되, 에틸알코올과 프로필렌글리콜이 9~6 : 1~4 의 부피비율로 제공되어 2차 냉매액으로 이용되고,냉매교환장치에서 1차 냉매와 2차 냉매액이 열교환되면서 침지식 급속동결장치로부터 이송되어 유입되는 승온 된 2차 냉매액을 냉매교환장치에서 초저온으로 급속냉각시켜 2차 냉매액을 침지식 급속동결장치로 다시 이송시켜 보내주는 단계를 포함하여 제공되는 것을 특징으로 하는 식품류 냉동방법.
