- α-갈락토시다제 및 β-글루코시다제의 활성이 높은 류코노스톡 슈도메센트로이데스 K-AP3(Leuconostoc pseudomesenteroides K-AP3, 기탁번호 KFCC 11409P).
- 대두 또는 대두배아를 상기 청구항 1의 류코노스톡 슈도메센트로이데스 K-AP3으로 발효시켜 얻어진 것을 특징으로 하는 이소플라본 농축물.
- 제 2 항에 있어서, 상기 이소플라본 농축물은 상기 류코노스톡 슈도메센트로이데스 K-AP3으로 48시간 발효시, 비배당체 이소플라본을 0.7 ~ 0.8 중량%를 함유하고 있는 것을 특징으로 하는 이소플라본 농축물..
- 제 2 항에 있어서, 상기 이소플라본 농축물은 상기 류코노스톡 슈도메센트로이데스 K-AP3으로 48시간 발효시, 스타키오스(stachyose) 4 ~ 6 중량% 및 라피노스(raffinose) 1 ~ 2 중량%를 함유하고 있는 것을 특징으로 하는 이소플라본 농축물.
- 제 2 항 내지 제 4 항 중에서 선택된 어느 한 항에 있어서, 상기 농축물은 용액 또는 분말 형태인 것을 특징으로 하는 이소플라본 농축물.
- 대두 또는 대두배아와 물을 1: 7 ~ 10 중량비로 혼합한 후, 멸균 처리하는 단계; 및상기 멸균 처리된 혼합물에 청구항 1의 류코노스톡 슈도메센트로이데스 K-AP3를 접종, 발효시키는 단계; 를포함하는 것을 특징으로 하는 이소플라본 농축물의 제조방법.
