유자는 남해안에서 생산되는 우리나라 특산물로 세계적으로 중국 일본 등에서만 생산되고 있다. 유자는 주로 유자청으로 이용되고 있어 겨울철 한철에만 이용되고 쓴맛 때문에 생과를 이용할 수 없으므로 현재 우리나라의 유자 농가는 과잉생산으로 도산 직전에 직면해 있다. 유자청 제조시 유자씨앗(전체과일의 10-20%)과 유자즙(Citron juice)이 상당량 부산물로 나오는 데 이는 마땅히 소비할 방법이 없어 전량 폐기되고 있다. 유자즙에는 여러 가지 생리활성물질(Flavonoid 및 limonoid)이 다량 들어 있고 특히 모노테르펜(monoterpene)류인 리모넨(limonene)이 다량 들어 있다. 리모넨은 각종 물질의 용매로 사용될 만큼 자연 세척력이 강하고 피부암을 비롯한 폐암, 위암 및 대장암을 예방하는 효과가 있는 것으로 보고되고 있다. 또한 유자즙에는 비타민 C를 비롯하여 비타민 E, 비타민P 등 피부보호에 매우 좋은 비타민이 다량 들어 있고 구연산, 사과산 등이 다량 들어 있어 살균력과 함께 피부보호 작용을 할 수 있다. 유자씨앗에는 약 20%의 유자 씨앗기름이 있는데 이 지방은 필수 지방산이 풍부하고 특히 일반 식물성 유에는 없는 것으로 알려진 DHA가 다량함유되어 있어 피부노화 방지에 매우 좋다. 유자씨앗에서 유자기름을 추출한 후 잔사를 메탄올로 추출하면 다량의 플라보노이드 및 리모노이드 화합물이 함유된 추출물을 얻을 수 있다. 이들 물질은 각종 암을 예방하는 물질로 보고되고 있고 항 산화제로 잘 알려져 있으므로 피부노화방지에 우수한 물질들이다. 유자 과피로부터 에틸에테르를 사용하여 추출한 추출물 중에는 다량의 리모닌(limonine)을 비롯한 정유 성분이 들어 있어 피부에 유연성, 탄력 및 보습효과가 있어 이들을 이용하여 화장품의 원료로 이용할 수 있다. 특히 모발의 유연성을 주는 효과가 매우 크므로 샴푸의 원료로 적당하다.Yuzu is a Korean specialty produced in the south coast and is produced only in China and Japan.
