Abstract
Description
양파추출물 및 양파분을 혼합한 양파간장, 양파된장, 양파고추장 및 양파장아찌를 제공하고자 한다.To provide onion extract, onion soy sauce, onion miso, onion chilli and onion pickles mixed with onion extract.
양파추출물 및 양파분을 혼합한 간장, 된장, 고추장 및 건조한 양파 장아찌는 없다.There are no soy sauce, miso, red pepper paste and dried onion pickles mixed with onion extract and onion powder.
양파간장: 간장을 담글 때 일반적으로 식수를 이용하나 양파간장은 식수대신 양파 추출물을 이용한다. 양파추출물을 만드는 과정은 양파를 세척하여 삶아서 짜낸 추출물이나 생양파를 마쇄한 후 즙을 짜서 끓인 추출물을 사용한다. 장 담그는방법은 재래식 방법으로 담는다. 양파추출물에 소금을 넣는 량은 계란이 양파추출물 위로 100원짜리 동전만큼 떠오를 때까지 넣는다. 이물에 메주를 깨끗이 씻어 넣고 건고추, 숯 등을 함께 넣어 숙성시킨다. 숙성이 되면 메주를 건져내고 간장물은 고운체로 걸러서 불을 때서 달이면 양파 추출물을 이용한 간장이 된다. 이간장에 양파분을 주머니에 담아 숙성하면 양파에서 당분을 포함한 양파성분이 간장에 우러나와 간장맛이 더 좋아진다. 또한 기존 매장에서 판매하는 간장에 양파분을 주머니에 넣고 담가두어 숙성시키면 양파 성분이 우러난 양파간장이 된다.Onion Soy Sauce: Drinking soy sauce usually uses drinking water, but onion soy sauce uses onion extract instead of drinking water. [양파분] 양파는 수분이 90% 이상이므로 자연온도에서 건조하기가 어렵다. 그러므로 양파를 건조하려면 건조기를 사용하는 것이 좋다. 양파를 세척한후 썰어서 건조기 안에 넣는다. 건조 온도를 100℃로 조절해 놓고 건조하면서 1시간에 1번씩 뒤집어준다. 이렇게 5시간 동안 건조하고 건조온도를 75℃로 조절해 놓고 위와같은 방법으로 3시간 동안 건조하면 완전 건조가 된다. 이것을 분쇄기로 분쇄하면 양파분이 된다.[Onion] Onion is more than 90% moisture is difficult to dry at natural temperature. 상술한 바와 같이 간단히 설명하면 다음과 같다.A brief description as described above is as follows.

요즘 포도주는 산지인 프랑스보다 한국에서 인기가 더 높다. 포도주가 건강에 좋다는 기사가 나간 후 너도나도 포도주를 마시기 때문이다. 그러나 이보다 훨씬 몸에 좋은 것이 바로 우리의 마늘과 양파다.Nowadays, wine is more popular in Korea than France, the country of origin. After the article that the wine is good for health, you too drink wine. But much healthier than this is our garlic and onions.
최근 필자는 일본 교토대학 의학부가 주관하는「국제노화촉진 쥐 학술발표회」에 참가했다. 이곳에서「치매동물모델 쥐(SAMP8)에 있어서 뇌의 기억 ·학습상태에 미치는 마늘과 양파추출물의 투여효과」라는 논문을 발표해 호응을 얻었다.Recently I participated in the International Conference on Promoting Rats, organized by the Ministry of Medicine, Kyoto University, Japan. Here, he published a paper entitled "The Effect of Garlic and Onion Extracts on the Memory and Learning Status of Brain in Dementia Animal Model Rats (SAMP8)".
치매연구는 그동안 적당한 동물모델이 없어 매우 어려웠다. 다행히 교토대학의학부 다케다교수팀이 수명이 1년정도인 SAMP8이라는 치매모델 쥐를 개발하는데 성공했다.Research on dementia has been difficult because there is no suitable animal model. Luckily, the team of professors Takeda Kyoto University has succeeded in developing a dementia model mouse called SAMP8, which has a lifespan of about one year.
이 동물에게 마늘 ·양파의 에탄올추출물을 하루 200mg씩 사료에 첨가해 먹였다. 8개월후 시험해본 결과 전혀 투여하지 않은 대조그룹에 비해 획득시험은 양파투여그룹이 32.6%, 기억시험은 마늘투여그룹이 22.5%나 증가한 것으로 나타났다.The animals were fed with 200mg of garlic and onion ethanol extracts per day. After 8 months of testing, the control group had an increase of 32.6% in the onion administration group and a 22.5% increase in the garlic administration group in the memory group.
뇌세포중에 존재하는 신경전달물질인 도파민의 함량은 10%(마늘)에서 25%(양파)까지 증가했고 대사산물에 대한 세로토닌도 20%(양파)에서 35%(마늘)까지 늘었다. 신경세포에 강력한 독성으로 작용하는 활성산소의 생성억제효과도 30%(양파)에서 55%(마늘)까지 증가하는 등 마늘과 양파의 치매예방 및 치료 가능성이 입증되었다.Dopamine, a neurotransmitter present in brain cells, increased from 10% (garlic) to 25% (onion) and serotonin for metabolites increased from 20% (onion) to 35% (garlic). The inhibitory effect of free radical production, which is a potent toxic to neurons, also increased from 30% (onion) to 55% (garlic), which proved the possibility of preventing and treating dementia of garlic and onion.
