계란의 성분검사는 한국식품연구원에서 시행하였으며, 콜레스테롤 분석 검사방법은 국제화학분석방법규격(AOAC) Official Method 994.10로 검사하였으며, 비타민 A, C, E의 성분분석검사는 식품공전(2006)에 기재된 미량영양성분시험법으로 검사하였다.The ingredient test of eggs was conducted by the Korea Food Research Institute. 계란의 성분 분석 결과(표 2), 실시예 2의 콜레스테롤 함량은 380.1 mg/100g 으로, 일반계란과 비교하여 약 0.69배 정도 수준으로 측정되었고, 비타민 A는 비슷한 수준이었으나, 일반 계란에서 검출되지 않는 비타민 C 및 E가 각각 0.06 mg/100g 및 0.92 mg/100g 정도로 측정되어 비타민 성분이 강화되었음을 확인하였다.
