Claims (3)
- 원료삼(수삼)을 증삼기에 넣고 60 ~ 80℃에서 2 ~ 4시간 증삼하고 그 상태에서 온도를 높혀 100 ~ 105℃에서 20 ~ 30분 동안 증삼한 후 꺼내어 꺼내어 5 ~ 10분간 냉각시켜 원료삼의 온도가 30 ~ 40℃ 일 때 다시 증삼기에서 100 ~ 105℃에서 증삼하는 과정을 3 ~ 5회 반복하는 제1단계;
상기 제1단계 후, 원료삼을 50 ~ 80℃에서 12 ~ 24시간 동안 온건조한 후 0 ~ -20℃에서 12 ~ 24시간 동안 냉건조하는 제2단계;
제2단계 후, 원료삼을 상온에서 태양광에 의해 3 ~ 6시간 건조시키는 제3단계;
상기 제3단계 후, 원료삼을 그늘진 곳에서 10 ~ 20일간 자연 발효시킨 후, 30 ~ 60일간 강제통풍하면서 발효시키는 제4단계;
를 포함하여 이루어진 것을 특징으로 하는 발효 홍삼 제조방법.
- 제1항에 있어서,
제2단계 후, 원료삼을 다시 증삼기에 넣어 90℃에서 2시간 증삼한 후 꺼내어 상온에서 10 ~ 20일간 자연발효 시키는 단계가 더 포함되는 것을 특징으로 하는 발효 홍삼 제조방법.
- 제1항에 있어서,
제4단계후, 원료삼을 10 ~ 20일간 다시 한번 더 그늘진 곳에서 자연발효시킨 후 30 ~ 60일 동안 강제통풍하면서 발효시키는 단계가 더 포함되는 것을 특징으로 하는 발효 홍삼 제조방법.
