Claims (4)
- (a) 선별 대두를 품온에서 40~120℃로 가열하는 것에 의하여 콩을 유연하게 하는 가열 공정과,(b) 대두의 껍질을 비비는 것에 의하여 대두의 껍질에 균열을 생기게 하는 보조 탈피 공정과,(c) 대두의 박피를 행하는 박피 공정과,(d) 박피 공정으로 박피된 껍질을 바람을 이용하여 제거하는 공정과,(e) 상기 (d) 공정을 한 대두혼합물로부터 탈피되지 않은 환대두와 반할 자엽 및 배아의 혼합물로 분리하는 제 1체분리 공정과,(f) 상기 반할 자엽 및 배아의 혼합물을 자엽과 배아로 분리하는 제 2체분리 공정과,(g) 제 2체분리 공정에 의하여 분리된 자엽을 냉각하는 냉각 공정과,(h) 냉각 처리된 자엽의 박피를 행하는 재박피 공정과,(i) 세균 수가 300개/g 이하인 대두를 검사에 의해 선별하는 검사공정을 포함하는 (j) 환대두를 자엽과 배아와 껍질로 분리하는 방법을 사용해서 세균 수가 300개/g 이하로 되도록 제조된 탈피 대두를 이용하고,(k) 탈피 대두에 대하여 90℃의 온도에서 가열한 열수 또는 수증기에 의해 120초간 증자(烝煮)하는 부분적 실활 증자공정과,(l) 증자한 탈피 대두를 함수량 7 질량% 이하까지 건조하는 건조공정과,(m) 건조한 탈피 대두를 분쇄기를 이용하여 분쇄하는 분쇄공정과,(n) 분쇄한 탈피 대두를 소정 입도 이하의 대두 분말만으로 분급하는 분급공정으로 이루어지고,(o) 상기 분쇄공정이 20~40 메시의 입도로 조분쇄하는 조분쇄 공정과, 100~1000 메시의 입도로 미분쇄하는 미분쇄 공정으로 이루어지고,(p) 상기 조분쇄 공정 및 상기 미분쇄 공정을 실시하는 분쇄기의 내부에 60℃ 이상의 열풍을 유통시켜서 가열 살균하도록 한 것을 특징으로 하는 전지 대두분의 제조방법.
