Claims (17)
- 청국장 분말, 유산균 발효 분말, 낙산균 발효 분말, 셀레늄 이스트, 해조 칼슘 및 어성초 추출물을 함유하는 기능성 청국장.
- 제 1항에 있어서, 상기 기능성 청국장은 조성물 전체 중량당 50 내지 70중량%의 청국장 분말, 5 내지 10중량%의 유산균 발효 분말, 5 내지 10중량%의 낙산균 발효 분말, 0.05 내지 0.5중량%의 셀레늄 이스트, 2.5 내지 5중량%의 해조 칼슘 및 5 내지 30중량%의 어성초 추출물을 함유함을 특징으로 하는 기능성 청국장.
- ⒜ 대두를 세척하고 물에 침지시켜 대두를 불린 후, 삶아서 증자시키는 단계;⒝ 단계 ⒜의 증자된 대두를 냉각시킨 후, 바실러스 서브틸리스 균을 접종하여 발효시키는 단계;⒞ 단계 ⒝의 발효된 대두를 건조시킨 후, 분쇄하여 청국장 분말을 제조하는 단계;⒟ 대두박을 세척하고 물에 침지시켜 불린 후, 가압 멸균시키는 단계;⒠ 단계 ⒟의 멸균된 대두박에 유산균 종균 및 낙산균 종균을 각각 접종하여 발효시키는 단계;⒡ 단계 ⒠의 유산균 발효물 및 낙산균 발효물을 각각 건조시킨 후, 분쇄하여 유산균 발효 분말 및 낙산균 발효 분말을 제조하는 단계; 및⒢ 단계 ⒞의 청국장 분말, 단계 ⒡의 유산균 발효 분말 및 낙산균 발효 분말, 셀레늄 이스트, 해조 칼슘 및 어성초 추출물을 혼합하는 단계로 구성됨을 특징으로 하여 제 1항 또는 제 2항에 따른 기능성 청국장을 제조하는 방법.
- 제 3항에 있어서, 상기 단계 ⒜는 대두를 1 내지 3시간 동안 물에 침지시켜 대두를 불린 후, 80 내지 100℃에서 2 내지 4시간 동안 삶은 다음 50 내지 70℃에서 4 내지 6시간 동안 재차 삶아서 증자시키는 것을 특징으로 하여 기능성 청국장을 제조하는 방법.
- 제 3항에 있어서, 상기 단계 ⒝는 단계 ⒜의 증자된 대두를 40 내지 45℃까지 실온에서 냉각시킨 후, 상기 대두에 대해 바실러스 서브틸리스 균 배양액의 중량비를 1 : 0.00005 내지 1 : 0.0001로 하여 대두에 접종하고 30 내지 35℃에서 48 내지 52시간 동안 발효시키는 것을 특징으로 하여 기능성 청국장을 제조하는 방법.
- 제 3항에 있어서, 상기 단계 ⒞는 단계 ⒝의 발효된 대두를 40 내지 60℃에서 40 내지 50시간 동안 건조시킨 후, 분쇄하여 청국장 분말을 제조하는 것을 특징 으로 하여 기능성 청국장을 제조하는 방법.
- 제 3항에 있어서, 상기 단계 ⒟는 대두박을 1 내지 3시간 동안 물에 침지시켜 불린 후, 100 내지 130℃에서 30 내지 50분간 1 내지 1.5㎏/㎠ 압력으로 멸균시키는 것을 특징으로 하여 기능성 청국장을 제조하는 방법.
- 제 3항에 있어서, 상기 단계 ⒠는 단계 ⒟의 멸균된 대두박에 대한 유산균 종균 배양액의 중량비를 1 : 0.025 내지 1 : 0.05로 하고, 상기 대두박에 대한 낙산균 종균 배양액의 중량비를 1 : 0.05 내지 1 : 0.15로 하여 상기 대두박에 각각 접종하고 20 내지 40℃에서 36 내지 72시간 동안 발효시키는 것을 특징으로 하여 기능성 청국장을 제조하는 방법.
- 제 8항에 있어서, 상기 유산균 종균은 락토바실러스 애시도필러스; 락토바실러스 카제이 균 또는 이들의 조합으로부터 선택되는 것을 사용하며, 상기 낙산균 종균은 클로스트리디움 브타리쿰 균인 것을 사용함을 특징으로 하여 기능성 청국장을 제조하는 방법.
- 제 3항에 있어서, 상기 단계 ⒡는 단계 ⒠의 유산균 발효물 및 낙산균 발효물을 각각 40 내지 60℃에서 40 내지 50시간 동안 건조시킨 후, 분쇄하여 유산균 발효 분말 및 낙산균 발효 분말을 제조함을 특징으로 하여 기능성 청국장을 제조하 는 방법.
- 제 3항에 있어서, 상기 단계 ⒢는 단계 ⒞의 청국장 분말 50 내지 70중량%, 단계 ⒡의 유산균 발효 분말 및 낙산균 발효 분말 각각 5 내지 10중량%, 셀레늄 이스트 0.05 내지 0.5중량%, 해조 칼슘 2.5 내지 5중량% 및 어성초 추출물 5 내지 30중량%를 20 내지 30㎖의 물에 혼합하는 것을 특징으로 하여 기능성 청국장을 제조하는 방법.
- 제 3항에 따른 방법으로 제조된 기능성 청국장을 제환기에 넣어 환의 형태로 성형한 후 30 내지 40℃에서 6 내지 12시간 건조시켜 환으로 제조하는 방법.
- 제 12항의 방법에 따라 제조된 기능성 청국장 환.
- 제 1항에 있어서, 추가로 석류 추출물을 함유하는 것을 특징으로 하는 기능성 청국장.
- 제 14항에 있어서, 상기 석류 추출물은 조성물 전체 중량당 5 내지 15 중량%로 함유되는 것을 특징으로 하는 기능성 청국장.
- 제 3항에 있어서, 단계 (g)는 추가로 석류 추출물을 혼합하는 것을 특징으로 하여 기능성 청국장을 제조하는 방법.
- 제 16항에 있어서, 상기 석류 추출물은 5 내지 15중량%로 혼합되는 것을 특징으로 하여 기능성 청국장을 제조하는 방법.
