Claims (4)
- 산천어를 활복하여 냉수(얼음물)에서 내장과 아가미를 제거하고 세척하는 산천어 세척해체공정과:상기 세척해체공정이 마무리된 산천어의 복부내부 및 외피에 천일염으로 건염법을 수행하고, 4℃ ~ 5℃에서 12 시간 밀폐된 냉장을 수행하는 염지공정과:얼음물과 흐르는 물에서 약 8 시간 정도 염지된 산천어를 세척한 다음 1시간 정도 강제 풍건을 수행하는 염지해지 및 풍건공정과:숯불을 열원으로 순차적으로 24시간 정도 열과 훈연 및 자연 냉각을 수행하는 훈연공정으로 이루어진 훈제 산천어 제조방법.
- 제 1 항에 있어서, 훈연공정은 숯불을 열원으로 40℃ ~ 50℃ 훈연실에서 2시간정도 산벚나무 후레이크 연기로 약한불로 훈연을 수행한 다음, 70℃ ~ 80℃의 훈연실에서 7시간 내지 8시간 정도 훈연을 수행하며, 뒤이어 숯불화로를 제거하여 3시간 정도 자연냉각을 수행하고, 그 후 다시 참나무 숯불과 산벚나무 후레이크 연기를 이용하여 70℃ ~ 80℃의 훈연실에서 7시간 내지 8시간 정도 훈연을 수행하며, 참나무 숯불의 열원이 자연제거될 때까지 훈연을 유지시키는 것을 특징으로 하는 훈제 산천어 제조방법.
- 제 1 항에 있어서, 훈연공정 후 산천어의 외부 이물질을 부드러운 솔 등으로 깨끗이 제거한 후 진공포장하고, 이 진공포장된 훈제산천어를 자외선 살균하여 포장내부의 살균을 수행한 다음 최종포장을 수행하는 살균포장단계가 더 포함되는 것을 특징으로 하는 훈제 산천어 제조방법.
- 제 1 항 또는 제 2 항 또는 제 3 항으로 제조된 것을 특징으로 하는 훈제 산천어.
