Abstract

PURPOSE:To prepare the titled liquor containing valuable components in high concentration, having excellent palatability and free from fishy smell, by adding water and a proteinase to the meat of a snapping turtle and adding the treated product to a liquor. CONSTITUTION:(A) A meat part separated from a snapping turtle by removing shell, lower shell, nail blood, guts and fats from a snapping turtle is mixed with (B) preferably 0.5-50pts.wt. of water (based on 1pt.wt. of the component A) and then with (C) preferably 0.01-5.0wt.% of a proteinase such as pepsin or trypsin (based on 1pt.wt. of the component A). The mixture is maintained at 30-60 deg.C and the obtained viscous liquid is heated e.g. at >=90 deg.C and, as necessary, filtered to obtain an extract. The objective liquor can be prepared by adding the extract to SHOCHU (low-class distilled spirits), Japanese rice wine, whiskey, etc.
