Abstract

PURPOSE:To obtain a tasty sardine food without fishy smell or peculiar bloody smell even when a raw sardine is processed in the original shape, by quick- drying the surface of the raw sardine with hot air, containing the resultant sardine having the dried surface in a heat-resistant packaging film, deaerating, hermetically sealing and packaging the sardine, then thermally cooking and sterilizing the packaged sardine. CONSTITUTION:The surface of a raw sardine 2 is quick-dried with hot air in a hot-air dryer 1 and the resultant sardine 3 having the dried surface is contained in a heat-resistant packaging film 4, deaerated, hermetically sealed and packaged to provide a packaged sardine 7, which is then thermally cooked and sterilized in a thermal cooking sterilizer 8 to afford the aimed sardine food 9.
