があり、シイエノキの前記栽培ものより味覚、色、かお
りがすぐれている。そこでこの発明は、エノキタケを通
年栽培し且つ全形が天然品と同様のものとする人工栽培
方法を目的とする。

うことである。即ち、従来ではまんえんした菌糸数をそ
のままにして暗い室で育成したために、各子実体の発育
が劣って白くかさが小さく細長いエノキタケとなってい
るが、この発明では菌掻きにより菌子数を押えて上で明
るい室で育成するために、子実体がいつきに強く発育し
て天然色をもち且つかさが大きく太めのエノキタケが成
育するものである。
