Abstract

PURPOSE: To eliminate the pnugency of a distilled liquor, by keeping the distilled liquor under a high pressure.
CONSTITUTION: A distilled liquor, e.g. brandy or whisky, particularly just after the distillation, is introduced into a pressure-resistant high pressure generating apparatus, and kept at a high gauge pressure ≥ about 100 kg/cm2, preferably ≥ 500 kg/cm2 for a suitable time. For example, the raw brandy just after the distillation is kept at a pressure of 100 kg/cm2 for 100hr or longer. According to the method, an effect on reduction in the irritant flavor of ethyl alcohol in the raw brandy is obtained, and the pnugency is markedly reduced to improve the pleasantness to the taste.
