Abstract

PURPOSE: To obtain an L-ascorbic acid preparation having high stability and useful for nutrition or food processing, by mixing L-ascorbic acid with a coating agent consisting of an oil or fat having specific melting point and an acetylated glyceride, thereby pulverizing and coating the ascorbic acid.
CONSTITUTION: 1pt.wt. of L-ascorbic acid or its salt (e.g. Ca salt) is mixed with 0.5W100pts.wt. of a coating agent consisting of an oil or fat having a melting point of 50W80°C (e.g. hardened beef tallow) and one or more esters selected from glycerine monoacetomonofatty acid ester, glycerine monoacetodifatty acid ester and glycerine diacetomonofatty acid ester. L-ascorbic acid and its salt are oxidizable very easily, and decomposed by oxidation with the oxygen in air when the acid is in a hot or alkaline aqueous solution. The L-ascorbic acid mixture containing said molten coating agent has excellent dispersibility and high dispersion stability.
