Abstract
PURPOSE: To prepare boiled beans storable for a long time, reducing the sugar content as low as possible, by treating a preliminarily seasoned raw material of boiled beans under reduced pressure, thereby reducing the water-content, removing the latent heat of vaporization and porosifying the internal tissue.
CONSTITUTION: Swollen raw material of boiled beans is steamed and boiled in the pressence of a softening agent to remove the soluble impurities, and preliminarily seasoned with sugar syrup and a seasoning liquid. The concentration of the sugar syrup is usually 1/2W1/3 of that of the boiled beans. After draining, the product is steamed with high pressure steam for 10W20min, evacuted without delay to about 400W500mmHg to evaporate the water contained in the boiled beans, and cooled by keeping the state for 10W20min.
